At IAO Design, we see fermentation, canning, and tea and spice blending as methods for Comestible Archiving.

Comestible Archiving is a category of food design we have created to describe the food-based archival work we have developed over the years at IAO Design. The ephemeral nature of this archival work enables one to revisit sensory memories of the past, recontextualizing the joy and grief that accompany the nuances of time and ecological change. The methods we use to build our archive, such as foraging and gardening, sustainable sourcing have existed for centuries in communities around the world. We are honored to continue that tradtion here in our archive.
